We are Joseph Brot – the organic bakery from the Waldviertel. Since our founding in 2009, we have followed a clear vision: food that promotes life. Food that brings out the best in nature. Food that is simply good for us humans. Our most important ingredients have remained the same to this day: grain from living fields, traditional baking craft, and direct trade.

Josef Weghaupt started working as a food technologist at an industrial bakery in Vienna in 2002. As a trained butcher, he came to the job with an unbiased perspective. And he wanted to learn: the organic boom enabled him to visit businesses all over the world and learn everything there was to know about the craft. He quickly realized that bread could be so much more. At the same time, he became aware of his limitations. In the end, the industry is always about quantity. Josef wants more. He wants to redefine baking—and make bread that stands on its own.

Josef begins baking his own bread. By hand. Using regional grains. With a completely new approach to fermentation. It raises eyebrows. Criticism surfaces. Who needs this? After all, it’s just bread.
But when Josef reveals his first loaves, the doubts fall silent. The flavor speaks for itself. And suddenly, Josef’s bread is on everyone’s lips.

Josef continues to expand his horizons. He sets up his own bakery in the Waldviertel region. From the very beginning, everything is done by hand. This is to preserve tradition and to realize his own vision of bread without compromise. At the same time, Josef’s approach attracts more and more people. What began with Josef grows into a network of farming families, suppliers, and partner businesses. Josef becomes Joseph Brot, a company with 10 locations throughout Austria.
Restoring lost

Joseph Brot is growing. But the world is changing. More and more grain varieties are disappearing because they do not fit into the industrial system – with serious consequences for us all. Josef wants to take action. He is convinced that what works on a small scale today can have a big impact tomorrow. In 2019, Joseph Brot joined forces with 24 small-scale farming families to found the Ur-Gut initiative with the aim of reviving old grain varieties in their home regions.

To this day, everything we do revolves around the most important food in the world—bread. Our vision inspires people across borders to rediscover the craft. In 2025, we became the first bakery to receive the EU Organic Award. With both hands in the sourdough and our eyes on the future, we work every day for what the world means to us: food that tastes the way we want to live.

Where do you get your grains from?
We source 100% of our grain from Austria, directly from organic farming families whom we know personally.
What products do you offer?
We offer handmade organic sourdough bread, pastries, and sweets. In our manufactory, we also produce many to-go meals, spreads, soups, and desserts. We source products for our grocery store directly from long-standing partners. Our specialty coffee is roasted by our friends at Coffee Collective in Copenhagen.
What means "Bio" at Joseph Brot?
All of our raw materials come from certified organic agriculture. This means no chemical synthetic pesticides, no artificial additives, just natural cycles.
Can I order your products online?
Currently, there is no traditional online shop, but bread and baked goods can be pre-ordered and picked up at our stores. This can be done by phone or via our contact form.
Where can I find your bakeries?
We have a total of 10 branches in Vienna, Salzburg, Linz, and the Waldviertel region. You can find an overview of addresses and opening hours in the menu under “Locations.”
Can I also have breakfast or coffee at your place?
Yes — all of our locations offer specialty coffee and selected food, beverages, and, of course, our pastries.
